What sets all Mergaoliva’s ORGANIC extra virgin olive oils apart is their meticulous selection of olives at precisely the right stage of ripeness during the harvest months of October, November and December.
This careful process ensures the production of exceptional extra virgin olive oil, distinguished by its rich and diverse organoleptic nuances.
Alba is harvested in October and produced exclusively from all green PICUAL olives. It has intense green fruitiness with notes of fig tree, tomato plant, green banana peel and green almond. It is very fluid in the mouth, complex, balanced and harmonious, rich in floral nuances.
Cenit is an early-harvest olive oil, produced from carefully selected PICUAL or HOJIBLANCA olives, collected on the first day of November when they reach vibrant shades of green and purple. It offers medium fruitiness with green-ripe aromas and nuances of leaf, green tomato and banana.
Erebo, harvested on the first day of December, is crafted from fully ripened black olives with white pulps. The taste is soft, smooth and mildly intense. Sweet on the palate, with nuances of almond, and sensations of tomato and kiwi.
Mergaoliva also produces two very interesting and unique extra virgin olive oils:
First Day of Harvest is harvested on the first day of October from the best selection of green olives. It has highest polyphenols, contributing to its exceptional flavour and health benefits.
Acebuchina (Wild Olives) is a naturally “organic” extra virgin olive oil produced from small olives that grow on wild olive trees on the rugged and remote mountain slopes, which are difficult to access. It takes about 20 kg of wild olives to obtain 1 litre of extra virgin olive oil. It has a high content of tocopherols or vitamin E. The amount of this compound in ACEBUCHINA is almost three times that of traditional extra virgin olive oil.
